I want to put chapter headings and numbers in the same header, centering the Chapter title and sending the number to the far right. I have only figured out how to do this by manually deleting spaces until the desired result is achieved. Can different header information be acted upon by formatting commands independent of each other? If so, how?

Headers for dummies
The above can be achieved only if use automatic numbering in your chapter headings.
Please see the attached document. Its chapter headings are formatted with the “Heading 1” style. All the chapter headings have the automatic Roman numbers (this can be easily changed - just adjust the List formatting of the "Heading 1" style). The document header includes center-aligned and right-aligned tab stops. The header also includes a centered “Style reference (without numbering)” field displaying the contents of the nearest paragraph associated with the “Heading 1” style. The right-aligned manual text “Chapter #” is followed by a “Style reference (numbering only)” field displaying the automatic number of the nearest paragraph associated with the “Heading 1” style.
